This Parmesan cheese is a real “gem” of Salumeria Garibaldi, almost impossible to find. It is produced in very small quantities, and it is never sold before 30 months of maturing, ideal to let ripen and refine this small selection of Parmesan. The milk is obtained from cows of Frisona’s Breed, the master cheese maker, with a lot of care and attention obtains a white, sweet, soft and tasty cheese. For me unbeatable.
